Cucumber Choices

Alternatives to dark green slicing cucumbers do exist

(MCT) — We all know the dark green slicing cucumber with its thick skin and large seeds. It’s the most common type of cucumber sold at grocery stores and is usually found coated with food-safe wax to help it stay fresh.

Smaller pickling cucumbers, often the “Kirby” variety, are becoming more widely available. Slightly warty and mottled light and dark green, these are the cucumbers that grow up to become kosher dills.
