Edamame and penne pasta recipe

Here's a tasty and healthy recipe to try. I discovered it when sampling recipes for an upcoming healthy cooking food demo. This dish is an excellent source of whole grains, fiber, soy protein, and vitamins and minerals…and it’s delicious!

It even passed the husband and kids trial test.

Edamame and premature green soybeans that are an excellent vegetarian source of protein – they can be used in salads, stirfry, or even just as a snack by themselves. Black beans provide an excellent source of soluble fiber which can help to reduce cholesterol levels.

This recipe could be used as a side dish or as an entrée – one serving has as much protein as 3 oz. meat.
