An easy meal to get your day going

This breakfast bake does not need to be made night before

Rise and shine. Up and at ’em. Good morning. Get up, sleepyhead.

What greeting are you awakened with in the morning? Perhaps it is just the sound of an alarm clock.

My friend would wake her son by singing “The Most Beautiful Girl in the USA.” “Good mornin’ mornin’, hello sunshine, wake up sleepy head…”

Whatever it is, these words signal the start of a new day.

What better way to start the day than with a filling and delicious breakfast? Add in the components that it is easy to make and fast to bake and you have a winner!

Many breakfast casseroles need to be made the night before and baked in the morning. Most of these are really quite delicious; with different types of cheeses, sometimes cream, etc.

The little children in my family really do not enjoy these casseroles. They think that they are too spicy, or they are just not really sure what is in them.

This Easy Breakfast Bake is the perfect casserole to please every member of your family.

It is prepared right before you bake it, but the ingredients are easy to assemble and you can get ready for your day while it is in the oven.

Spread the crescent rolls in a 9x13 pan, add chopped ham or Canadian bacon. I personally prefer the Canadian bacon. If you quickly cook it in a pan on top of the stove, it tastes a bit like bacon without all the fat. (Actually, without hardly any fat at all.)  

Pour the beaten eggs, milk and pepper over, and top with cheese. It doesn’t get a lot easier than that. I have tried prebaking the crescent rolls for a crispier crust.  This is not such a good idea. When you add the eggs to the warm crust, the eggs start to cook and that is not the desired effect that you want. Also as it recooks with the toppings. the crust gets too brown, almost burnt tasting.  Not good.

Make it easy on yourself and assemble and place in the oven.

If you have leftovers, wrap them in plastic and put them in the refrigerator. Put them in the microwave the next day, for 15 to 30 seconds, and you have a tasty breakfast in no time at all. Do not overwarm in the microwave or the eggs will get rubbery.

This breakfast casserole is delicious served with fruit, or alongside other breakfast dishes.

It is so simple to make and delicious to eat, that it is simply delicious.

If you are looking to change up what you eat for breakfast, this Easy Breakfast Bake is a good place to start. Trust me, it tastes a lot better than cereal, Pop Tarts, or nothing at all every morning.

Don’t skip breakfast.  It is the meal that sets the tone for the entire day.

EASY BREAKFAST BAKE

1 can (8 oz.) refrigerated crescent rolls

8 oz. chopped ham or Canadian bacon

6 eggs

˝ cup cold milk

˝ tsp. pepper

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

Heat oven to 350 degrees.  Unroll dough into 9x13 inch baking pan; press to cover bottom of pan, firmly pressing holes and seams together to seal.

Sprinkle ham or Canadian bacon over crust.  Beat eggs, milk and pepper with whisk until well blended; pour over ham.  Top with cheese.

Bake for 25 minutes or until center is set.
