Here’s a recipe for a healthy dessert with only 50 calories each.
Athens Mini Phyllo Shells (frozen)
1 jar apricot jelly
1 cup low-fat vanilla yogurt
1 cup strawberries
Thaw frozen mini tarts. Heat ½ jar of jelly on low heat in saucepan. Using a spoon, spoon a small amount of jelly into each tart shell. Top with a spoonful of yogurt. Top with 2-3 slices of strawberries. Garnish with a small piece of mint. Experiment with different flavors of jelly, yogurt, and different types of fruit.
Makes 15 tarts.
