Dishes are summer sideshow to grilling

It’s not just what’s on the grill that matters

Lemony Broccoli and Garlicky Spinach are the perfect accompaniment to foods cooked on the grill ... or even in the oven.

Remember at the beginning of summer how excited you were to finally be able to grill outdoors after a long winter? 

Even though we all seem to love grilling, sometimes we tire of the same old sides. 

These two side dish recipes are delicious with anything cooked on the grill, or even on the stove for that matter. They are delicious, healthy and made with fresh ingredients. 

If you like spinach, you will love Garlicky Spinach. With only a few ingredients, it is easy and quick to make. You decide how much you want to wilt the spinach. The longer you cook the spinach, the more it will wilt; I like my spinach a little firmer, so I don’t cook it very long at all. The garlic gives it a really amazing flavor. 

Definitely do not forget the salt and pepper. Without these two seasonings, this dish is very bland.

It is best served warm, but I have been known to eat it straight from the refrigerator as a leftover. It is that good.

Just don’t overcook the spinach or you may end up with a side dish the size of a tennis ball!

Lemony Broccoli will appeal to all broccoli lovers. The lemon juice really gives it a fresh, vibrant flavor. Feel free to substitute margarine for butter if you wish.

Just the addition of a few simple ingredients really makes this broccoli dish really special.

I always steam broccoli so it doesn’t get too mushy and remains crisp. Do you hate the way broccoli smells when you are steaming it? I do.

To solve this problem, drop a cube of chicken bullion or 1 teaspoon of granules into the water.

Your kitchen will not smell bad and you will also have a little chicken broth to use with another meal.

Of course, these sides can be served anytime of the year. They are quick and easy dishes to make, especially when you have something cooking on the grill.

Sometimes the side dishes are the most challenging part of the meal. If you have your meat and potatoes, you naturally will want a vegetable of some kind to go with it. These two recipes are so simple to make that it is almost embarrassing to print out the recipe, but do it anyway.

And remember ... good cook always cleans up!

GARLICKY SPINACH

1 TB olive oil

2 TB thinly sliced garlic

1 ¼ lb. spinach, washed

Salt and pepper, to taste

Heat olive oil in a large skillet or wok. Add garlic, and stir-fry until lightly brown. Add spinach and stir-fry until wilted. Salt and pepper, to taste.

LEMONY BROCCOLI

12 oz. fresh broccoli flowerets

2 TB butter

1 TB lemon juice

½ tsp. pepper

Salt, to taste

Cook broccoli until tender-crisp. Melt butter with lemon juice, pepper and salt. Toss butter mixture with broccoli and serve.
